2 packages (3 oz each) cook-and-service vanilla pudding mix
1 tsp baking soda
1 tsp ground cinnamon
1⁄2 tsp salt
Instructions
In a mixing bow, beat the eggs.
Add oil and pumpkin; beat until smooth.
Combine remaining ingredients; gradually beat into pumpkin mixture.
Pour batter into five greased 5 inch x 1-1/2 inch x 2 inch loaf pans. Bake at 325 degrees F for 50-55 minutes or until a toothpick inserted near the center comes out clean.
